Blueberry Pancakes

 

Great for breakfast or brunch or anytime at all.   Easy, fast, low carb.  Can also be low fat, low cholesterol, low calorie, what more can you ask of a delicious pancake!

 

cook spray or butter

2 large eggs (I used, ½ cup Egg Beaters)

½ cup heavy cream (I used, 2% Lactaid milk)

¼ cup water

2 tablespoon sugar substitute such as Splenda

1 teaspoon sugar free vanilla extract

½ cup soy flour

1 tablespoon wheat or oat bran

¼ teaspoon baking powder

½ cup fresh blueberries (I have used fresh frozen unsweetened berries too)

 

 

Mix all the ingredients except the blueberries in a blender or food processor or a few seconds, stop, scrape down the sides and let it whirr again for a few more seconds till well blended.

 

Spray griddle or large skillet with cook spray.  I used a non-stick skillet and used cook spray very lightly.  Griddle should be very hot so that the pancakes don’t stick. Lowe the heat to medium-high.

 

Pour about 1 tablespoon full of the mixture per pancake on to the skillet or whatever.  I get about 12 to 15 pancakes.  Wait for the pancakes to begin to bubble, and then sprinkle each with a few blueberries, (around 5 works) let the pancakes bubble for a few seconds more white the berries get anchored into the batter.   Turn with a pancake turner and cook for a couple of minutes till the bottoms are lightly browned also.  Serve hot with your favorite topping.  We love 100% pure maple syrup for the couple of times a month we have pancakes as we feel it is worth the expense.  But I think a blue berry syrup made with letting the berries cook in a ¼ cup of Splenda and ¼ cup of water would go well on top of these yummies. 

 

12 pancakes are 4 servings.   Works just right for two of us.

 

You can try other berries or chopped apple or pear.  (for sliced into ½ rounds and placed on top of the pancakes.  To do that you must get apples smaller than the coke can bottom sized pancakes or make the pancakes larger to be able to fit the apple.  Your choice as always.  Cooked in a little bacon grease the apple pancakes would taste just so great with only a sprinkling of powdered sugar would be needed for those.  This way this dish can be served as a desert with a small dollop of vanilla ice cream on top.
