Cranberry and Apple Crumble

 

This is a yummy dessert which satisfies a sweet tooth. I used Granny Smith apples, but use your favorite tart variety or a mixture of apples you have on hand.  This is easier than making an apple pie.  You can forget the cranberries and add walnuts instead or just use apple only.

 

1/2  cup oat meal

1 tablespoon flour

1/4  cup Splenda

1/4  cup packed brown sugar

1/4  cup frozen light butter, cut in bits

4 diced apples about 6 cups

1 cup fresh or frozen cranberries

1/3  cup orange juice

1 tablespoon, orange zest

¼ cup Splenda

1 tablespoon cornstarch

 

Preheat oven to 375°.

Mix oat meal, flour, ¼ cup Spenda, brown sugar and light butter in a food processor until mixture resembles coarse meal.  I always have better luck with using a fork, some how it all becomes a glob when I use the processor.

 

Mix apple and cranberries in a large bowl. Add juice to the remaining ingredients and pour over apple mixture. Toss well. Spoon apple mixture into a 2-quart baking dish.  Use a ceramic, pottery or glass dish, metal will react with the apples and the orange juice.  Sprinkle with oat meal flour mixture. Bake at 375° for 40 minutes or until bubbly and golden brown. Serve warm.

 

Vanilla ice cream on top is great.  But fat free sour cream works well too.  Sprinkle a little orange zest on the ice cream or sour cream if you wish.  Since I have a fondness for orange zest, I do wish!
